Delish Biscuity Scone-ish Treats Recipe


 A few months ago, the sweet and fabulous Kate Wicker recommended Cricket magazine (for kids 9-14) and tossed a coupon code which I swiftly snatched up.  My girls are voracious readers and the idea of an ad-free publication entirely geared toward them arriving right in our mailbox and making them feel all grown-upish and stuff made me a little giddy.

And the other day it came!  And it was awesome!  Short stories, poems, comic strips, and RECIPES!

I'm actually not very good in the kitchen (surprise, surprise), but my Lizzy can rock the socks off some sweet baked treats, so when she asked if she could make the "A-Soulin' for Soul Cakes" I said "Only if you brew some coffee for me to drink with them".  Not really.  I brewed the coffee myself.  What does this look like, some kind of child-labor sweat shop?  Don't answer that, mkaythanx.

Then I posted a photo of our treaty treats and Bonnie asked for the recipe and I said "Okay, but only if you give me red lipstick tips!", which, incidentally, she has not done yet, so this is really some pro bono recipe posting.  Or something charitable like that.

ANYWAY.

We made a few modifications, so I'll give you the recipe as Lizzy prepared it:

Check your kitchen for these goodies:
1.5 sticks butter, softened
.75 cups sugar
2 large eggs
3.25 cups flour
.5 tsp nutmeg
.25 cup milk

Then do this:
1. Preheat oven to 375
2. Cream together butter and sugar
3. Beat eggs, one at a time, into mixture
4. Mix in flour and spices
5. Stir in milk
6. Form dough into balls, flattening each into a thick biscuity scone-ish shape on a well-floured countertop
7. Place cakes onto ungreased baking sheet. Use some kind of tool to mark each one with a cross
8. Bake 15-18 minutes.  Allow to cool on a cooling rack.

These are not super sweet.  They are a perfect "tea time" snack and are not ooey-gooey enough that the two year old is trying to steal them when you're not looking.  Win!

  7. I made these ages ago, but I wanted to tell you that tonight I mushed 2/3 into a pan, spread raspberry jelly on top, and rustic-ly dropped the rest on top and it was amazing!
