It was SO good. Goody goody good good. So good that I took a bite out of my sandwich before I remembered I wanted to take a photo. Evidence:
Also, blogger's kid probs: having your mom bring the big camera to the lunch table like it's nbd. Pretty sure this terrible scarring is going right into their record-smashing memoirs in 20 years.
Wanna make some? Of course you do. Because delicious, full of protein, easy to make, cheap, and you can eat it as a salad instead of as a sandwich if you're trying to kick the bread bucket. Wait. No. That would mean something about dying. Or a bucket full of bread. Or something. Kick the bread habit? Maybe? Whatever. You know what I'm trying to say.
THEEEEE best tuna 'n' egg salad recipe
(makes 4 sandwiches or 2 healthy helpings of the salad alone. Multiply accordingly for mountains of hungry, growing children)
3 hard boiled eggs
half onion
2 stalks celery
half green bell pepper
1 five oz. can tuna (drained)
2 Tbsp mayo
salt
pepper
curry powder
(all to taste)
-Finely chop the veggies.
-Unfinely chop your eggs (peel off the shells first. Hey, I don't know how much you know about cooking. If it's as much as I knew when I started, you need this tip. Ain't no shame.).
-Throw all the things into a bowl and mix. Done.
I simply had to have seconds so I could get a shot of the salad sans bread. What a martyr. |
My sandwich had slices of purple cherokee tomato on it and extra mayo on the bread, but you do it how you want.
Also, if you don't like either celery or green bell peppers, eliminate one and double the other. But I wouldn't eliminate both. The color and crunch are part of the delish.
Bonus! Pics I took while nursing this a.m.
Wow. Such princess. Many fancy. Amaze |
I have to try this! What size can of tuna?
ReplyDeleteOops! Let me add that. 5 oz.
DeleteSaving this recipe! Baby due tomorrow; moving to new house next week. Sounds like a postpartum/post-moving winner! Easy living here I come.
ReplyDeleteMy aunt used to make a tuna and egg salad for my cousin and I whenever I'd play at their house. I loved it and have always wanted to recreate it. Thanks for the nostalgia and the recipe!
ReplyDeleteWhy have I never thought to combine them?! Sounds delicious!! I'm gonna whip up a huge batch for this weekend for lunches. Thanks!
ReplyDeleteSimilar to our tuna salad. Tuna, mayo, boiled eggs and pickle relish (dill, never sweet). Good stuff! I like celery in mine, too but not onion, lol
ReplyDeleteNot sure about the tuna-egg combo but my GOSH those pics-while-nursing. Adorbs.
ReplyDeleteThis is how I make mine, too! Isn't it awesome??!!
ReplyDeleteThat little hand. Those eyes. LOVE.
ReplyDeleteI make mine like Tammy but oh, I want to try yours!! And what kind of bun is that? It looks yummy.
ReplyDeleteLove eggs and tuna together - love the nursing pics too :)
ReplyDeleteOk! I made it and you were absolutely right! So yummy! Plus, I added about 3Tbsp of pickle juice to it for a little flava flav.
